21 Acres: Preserving Techniques; jams and pickling

Come learn the basics of water bath preserving by putting up a jar of pickles, a pot of jam, a bottle of barbecue sauce and a blueberry syrup for ice-cream and pancakes. Learn the basic techniques that allow you to take the best of the farmers marker and preserve it at its peak of freshness.

Instructor: Marian Poole is a graduate of the Culinary Institute of America in New York and has been a professional chef for 15 years. Marian has cooked professionally all over the world and is a chef/instructor in Kirkland. She makes pastries for Whole Foods.

This on-going program at 21 Acres will feature culinary classes including the following themes: Cooking skills from raw ingredients; Meals from simple ingredients; Dinner parties and special events; Wine and food pairings; Outdoor grilling and pizza ovens; Special diets and allergy-free cooking; Raw food, vegetarian and vegan meals.
