21 Acres: The Art of Home-style Indian Cooking
Learn how to cook with Indian spices to create a fresh-tasting vegetarian dinner. Padma has put together a balanced meal and will share her knowledge of local stores to get supplies. She will share the secrets of puffy parathas and Indian roti breads, the Indian equivalent of a Mexican tortilla, how to make ghee and how to blend spices for flavor rather than heat.
Menu/Recipes
- Split yellow lentils with spinach (Palak aur mung ki dal)
- Spiced cauliflower and peas (Masaledar Gobhi matter)
- Mixed vegetables korma (Milli-julli subziyon ka korma)
- Cucumber and mint raita (kachumber aur pudina raita)
- Indian flatbreads (Parathas and rotis).
Padma
Mandalaparthy hails from the South India and has lived and travelled
all across Indian continent. She learned the art of cooking regional
Indian foods primarily from her grandmother and mother. After spending
some years working as a biologist, she decided to nurture her passion
and started a cooking school in 2008 called ‘Blissful Lotus Cooking
School” in Woodinville.
This on-going program at 21 Acres will feature culinary classes including the following themes: Cooking skills from raw ingredients; Meals from simple ingredients; Dinner parties and special events; Wine and food pairings; Outdoor grilling and pizza ovens; Special diets and allergy-free cooking; Raw food, vegetarian and vegan meals.
