SUMMARY:Cooking Class: Mexican Sopes
DESCRIPTION:Join us in the 21 Acres kitchen for a cooking class focused on Mexican sopes\, a traditional masa-based street food. In this hands-on class\, students will prepare traditional sopes using organic masa harina. Sopes are small\, thick corn masa cakes with a raised rim that holds a variety of toppings. Students will learn how to mix and hydrate masa\, shape and cook tortillas\, and form the characteristic raised edge that defines a sope. \nParticipants will also prepare a fresh seasonal salsa and toppings using ingredients sourced from the 21 Acres Farm Market\, and I will demonstrate the preparation of traditional refried beans\, an essential component of many Mexican antojitos. \nAs with the previous classes\, we will also discuss the cultural role of nixtamalized corn and masa traditions throughout Mexico and Central America. \nMenu Highlights\n– Handmade Mexican sopes using Masienda organic masa harina\n– Chef Ron’s refried beans (demonstration)\n– Fresh seasonal salsa prepared by students\n– Farm market toppings such as beans\, shredded greens\, cabbage\, radish\, crema\, herbs\, and cheese\n*if we want to add a meat component option\, I could supply some shredded roast chicken. \nThis class completes the Masa Series by tying together many of the techniques we’ve covered while celebrating another traditional corn-based dish. \nRegistration fee: $65 per person. This class is open to students ages 8 to 108\, and there will be a maximum of 12 attendees working in four groups across three shared stations in a fully hands-on\, collaborative learning environment. Pre-registration is required. \nAbout your teacher: Chef Ron brings over 40 years of global culinary experience from the Pacific Northwest\, Alaska\, Saipan\, and Hong Kong. Known for his passion for scratch cooking and food education\, he served 19 years as Executive Chef at Forest Ridge School in Bellevue\, where he built a vibrant garden-to-table program and inspired students to cook\, grow\, and share real food. Chef Ron now teaches farm-to-fork and cultural cooking classes across the region\, celebrating local farms\, seasonal ingredients\, and the joy of cooking together. \nCANCELLATION POLICY \nIn the event 21 Acres must cancel the class\, registered attendees will be informed as soon as possible and will be issued a full refund. SUMMARY:Cooking Class: Salvadoran Pupusas
DESCRIPTION:Join us in the 21 Acres kitchen for a hands-on exploration of Salvadoran pupusas\, one of Central America’s most beloved masa-based foods. Pupusas are thick\, handmade corn cakes traditionally filled and cooked on a griddle until lightly crisp on the outside and tender within. Deeply rooted in Salvadoran food culture\, pupusas are meant to be shared\, topped\, and enjoyed together. \nPupusas are traditionally eaten by hand\, topped with curtido and a spoonful of salsa roja. SUMMARY:Cooking Class: Tamales – Masa\, Fillings and Traditions
DESCRIPTION:Tamales are one of the oldest known prepared foods in the Americas\, with origins tracing back to ancient Mesoamerican civilizations including the Olmec\, Maya\, Aztec\, and Toltec cultures. Archaeological evidence suggests tamales were being made as early as 8000–5000 BCE. Portable\, nourishing\, and adaptable\, tamales served as essential sustenance for travelers\, warriors\, hunters\, and large community gatherings. \nBecause corn (maı́z) was considered a sacred crop in Mesoamerican belief systems\, tamales also held deep cultural importance. They were prepared for ceremonies\, offerings\, and celebrations\, symbolizing life\, renewal\, and community. Over centuries\, regional Klavors\, ingredients\, and wrapping materials evolved\, but the essential structure of a masa-Killed\, steamed bundle remained constant. \nToday\, tamales continue to be a cornerstone of Mexican\, Central American\, and Latinx cuisine\, enjoyed both as everyday food and for holidays such as Christmas\, New Year’s\, Las Posadas\, and Dı́a de los Muertos. The tradition of gathering family and friends to prepare tamales – known as a ‘tamalada’ – remains a cherished cultural practice. \nJoin us in the 21 Acres Kitchen to explore the art and science of traditional Mesoamerican tamales. Students will prepare fresh masa using whipped lard and chicken stock\, achieving the light and airy texture essential for authentic tamales. \nStudents will prepare a classic filling of pulled chicken with salsa verde\, layer and fold tamales in softened corn husks\, and steam them for approximately one hour. \nWhile the tamales steam\, students will prepare Champurrado\, a thick Mexican hot chocolate\, and assist Chef Ron in charring dried chiles to create Salsa Roja\, an essential pairing with tamales. \nStudents will share a hands-on workstation and receive personalized instruction from Chef Ron Askew. Key topics include understanding nixtamalization and masa preparation; balancing acidity\, heat\, and texture in salsas; and highlighting seasonal and local farm ingredients. \nRegistration fee: $70 per person. This class is open to students ages 8 to 108\, and the maximum class size is 12 students (6 workstations\, 2 participants per station). Pre-registration is required at the link below. \nAbout your teacher: Chef Ron brings over 40 years of global culinary experience from the Pacific Northwest\, Alaska\, Saipan\, and Hong Kong. SUMMARY:Cooking Class: Masa Tortillas and Fresh Salsa
DESCRIPTION:Join us in the 21 Acres kitchen to learn the art of making masa corn tortillas – then enjoy eating those fresh tortillas with a delicious salsa bar. During this two-hour class\, students will experience the process of preparing authentic masa tortillas and two classic salsas\, salsa verde and pico de gallo. A selection of seasonal farm products and pantry accompaniments from the 21 Acres Farm Market will be featured in both salsa recipes and self-serve salsa bar\, showcasing local flavors and sustainable ingredients. \nMasa tortillas trace their origins to ancient Mesoamerica as early as 500 BCE\, where indigenous peoples domesticated corn and discovered nixtamalization—a process that transformed corn into masa\, the dough used for flatbreads. These early tortillas served as a vital food source and carried profound cultural and spiritual meaning for civilizations such as the Aztecs and Maya. To learn more about the history and significance of masa\, check out this article in Salon magazine. \nOver time\, tortillas have continued to evolve and are a versatile vessel for meals both traditional and non\, for tacos and taquitos and even leftovers. According to Jorge Gaviria\, founder of the heirloom masa company Masienda\, “A tortilla is\, simply put\, a perfect food. It can be used as a utensil\, a wrapper\, or the starting point for many delicious preparations. A good tortilla\, made fresh and hot off the comal\, needs nothing more than a sprinkle of salt to be enjoyed.” \nEach pair of students will share a hands-on workstation and receive personalized instruction from Chef Ron Askew. Key topics include understanding nixtamalization and masa preparation; hands-on tortilla pressing and cooking; balancing acidity\, heat\, and texture in salsas; and highlighting seasonal and local farm ingredients. \nRegistration fee: $55 per person. SUMMARY:Cattail Wall-Hangings
DESCRIPTION:Spend the day at 21 Acres with local basket weaver\, Erin Cox\, and learn a variety of basketry techniques while getting to know some of the weave-able plants that grow in the PNW.  \nErin has been drawn to macrame for years. Many of the skills and projects can and do crossover with natural weaving. But a traditional macrame project with handwoven plant cordage instead of store-bought cotton rope would take a reeeeaaaallly long time to make. Super satisfying but way too long for a workshop. \nInsert shredded cattail – now we can make the background curtain in a flash and spend our time adding decorative twining\, knotting\, beads\, braiding and decorations on top. Everyone will learn the technique for making natural cordage\, a 5 strand flat braid\, and more! \nAll workshop materials have been harvested by hand sustainably and responsibly in the Puget Sound area. \nClass size max: 12 students | 6 minimum. Age minimum: 12 with accompanying adult (both attendees should purchase a ticket). The workshop will be held in the downstairs meeting room next to the 21 Acres Farm Market. \nThe fee is $71.60. Click the link below to register directly with the teacher\, Erin Cox.  \nClass registration is NON-REFUNDABLE. However\, if you want to sell or give your spot to a friend\, I’m happy to welcome someone else in your place. Due to the nature of the projects (materials/soaking\, etc) and the small class sizes\, I’m unable to support refunds or credits. \nAbout your teacher: Erin Cox is a talented and knowledgeable weaver\, crafter and artist with a special reverence for plants. She’s also been a willow farmer since 2024\, when she joined the SnoValley Tilth Experience Farming Project in Carnation. She honors the cultural significance of farms\, which historically have provided much more than food\, including baskets\, trellises\, medicine\, wool\, and more. SUMMARY:Farm Tour: Focus on Dry Farming
DESCRIPTION:Dry farming is a water-smart\, climate-adapted growing practice here in the PNW\, and in this era of rising temperatures and extended periods of drought due to climate change\, dry-farmed produce offers an important opportunity to bolster local food systems and our home gardens.   \nFarm Manager\, Ansley Roberts\, will lead a special farm tour focused on the dry farming trials here at 21 Acres\, including tomatoes\, squash\, and dry beans. You’ll learn how farmers grow produce varieties that need zero irrigation and taste absolutely delicious.  \nIn-person tours of the 21 Acres Farm are a great way to explore how agroecology\, soil health and land stewardship can build resilient local food economies and support direct climate action. Join us and uncover what farming in the Sammamish Valley looks like. Bring your questions! \nClick the link to register for this free tour. Details will be provided via Eventbrite after registration. \nThe Farm Walk is not ADA Accessible. SUMMARY:Growing Willow in an Urban Garden
DESCRIPTION:Spend the day at 21 Acres with local basket weaver\, Erin Cox\, and learn a variety of basketry techniques while getting to know some of the weave-able plants that grow in the PNW.  \nWillow loves the Pacific Northwest – not too hot\, not too cold and lots of water. With at least 30 native species and 100’s of non-native cultivars to choose from – consider adding fast growing\, dynamic\, and resilient willow to your urban garden. \nNo\, I’m not talking about the swaying branches of weeping willow. I’m talking about it’s smaller multi-stemmed Salix relatives that can offer color\, coverage\, garden support materials\, and basketry or wild crafting supplies. There are hundreds of willow species and hundreds more cultivars – there are so many willows to get to know. \nLearn more about how willow grows\, what it needs to thrive\, how to keep it happy (and not in your sewer!)\, and ways you can take advantage of its plentiful and annually renewable rods: trellises\, living fences\, wattle fences\, cloches\, homemade rooting hormone\, obelisks\, shade\, bark\, baskets\, bean teepees\, wreathes\, winter interest\, cut flowers\, and more. \nLocally grown organic willow cuttings (several varieties) will be available for sale. $2/cutting (industry standard is $2.50-$3.50 per cutting plus shipping) while supplies last. \nAbout your teacher: Erin Cox is a talented and knowledgeable weaver\, crafter and artist with a special reverence for plants. She honors the cultural significance of farms\, which historically have provided much more than food\, including baskets\, trellises\, medicine\, wool\, and more. SUMMARY:Nature Journaling at the Farm with Rebecca Jordan
DESCRIPTION:Join us once a month to sketch outdoors! \nCurious about the natural world? Join Becca\, ecology artist and writer\, to sketch at the 21 Acres farm. Learn to draw 2-3 different botanicals every month and stretch your scientific knowledge to explore questions about naturally-occurring phenomena such as pollination\, weird plants\, urban animals\, and more. Plus\, it’s just a beautiful place to spend your Thursday morning. \nPlease bring your own sketchbook and drawing materials. I will also bring extras just in case you happen to drop in. This class is suitable for all ages. Students under the age of 12 must have a ticketed adult accompanying them. \nThis class is offered at a sliding scale. Please pay what you are able so that I can continue to teach classes like this! \nThe farm is not ADA accessible. Paths are either unpaved or are mulched; if you have a traditional wheelchair or walker\, it’s recommended to choose a different class (email me for options). We will be walking across uneven ground that is mostly at no incline. \nRebecca Jordan (she/they) is a nature illustrator and ecology writer. She spent 4 years working at 21 Acres learning about Washington’s unique environment and writing about climate change. Now\, as an art teacher\, she loves to spark inspiration and curiosity about the natural world in her students. In her free time\, she goes to local parks to be inspired by nature and hangs out with her two cats. Learn more: carapaceillustration.com. \n

SUMMARY:Dry Farming Fair & Farm Walk
DESCRIPTION:Welcome to the first Dry Farming Fair at 21 Acres! You are invited to learn how farmers grow produce varieties that need zero irrigation and taste absolutely delicious. Dry farming is a water-smart\, climate-adapted growing practice here in the PNW\, and in this era of rising temperatures and extended periods of drought due to climate change\, dry-farmed produce offers an important opportunity to bolster local food systems and our home gardens. \nJoin the 21 Acres Farm Team on the front patio for a chance to taste and compare dry-farmed and irrigated produce grown on our own farm. Meet other water resilience advocates including King Conservation District and Washington Water Trust. Plus\, learn how our farmers select and save the dry-farmed tomato seeds to adapt them to our microclimate. At 1 pm\, Farm Manager\, Ansley Roberts\, will lead a special farm tour focused on the dry farming trials here at 21 Acres\, including tomatoes\, squash\, and dry beans. All activities are free and open to the public. \nThis event is part of the Washington Water Resilience Farm Tour Series in partnership with the Dry Farming Institute\, King Conservation District\, UW Farm\, Outback Farm\, Oxbow Farm\, American Farmland Trust\, and Oregon State University. For more farm-based learning on water resilient growing strategies\, check out the rest of the tour series here.
