Youth Cooking Class: Design Your Own Dish

  • Design Your Own Dish — A Two-Part Creative Workshop

    Unleash your creativity in a class all about designing your own unique recipe. Participants will be provided with various seasonal ingredients and will learn the basics of flavor combinations. Start with a small idea or single ingredient and develop it into a full-blown dish! On day one, we will learn about the process of creating a dish, then test out various exciting ingredients and cooking techniques. On day two, participants will finalize a recipe from their selected ingredients and prepare it! All ingredients are locally sourced by the 21 Acres Center.

    This workshop is intended for kids ages 12-18.

    Class prices include a meal. Accommodations for dietary restrictions upon request.

    Course takes place on two weekdays: August 7th (Tuesday) & August 9th (Thursday), from 6:00-8:30pm.

    This class will focus on ingredients and creativity!

    Skills:
    ●    In depth exploration of flavors, textures, and sourcing of provided ingredients
    ●    Basic knife skills
    ●    Basic sauté, braise and roast techniques
    ●    Recipes creation: where to start, flavor combinations, adjusting + tasting, and plating

    Available Ingredients: Potatoes, broccoli rabe, mushrooms, onion, rhubarb, cherries (if available), chickpeas, artichoke, leeks, asparagus, garlic, eggs, local melting cheese of choice, hard salt cheese for grating of choice, sheep’s milk feta, mussels, 21 Acres selected fish, 21 Acres selected cut of beef pork or chicken, cilantro (if available), shiso, mint, rosemary, thyme, grapeseed oil, wine for cooking, apple cider vinegar, rice wine vinegar, balsamic vinegar, orzo pasta, wild rice, butter, milk, flour, salt, pepper… other basic ingredients available upon request

    Instructors: Alice Carli & Erica Weisman of Seattle Cucina Cooking School

    Seattle Cucina Cooking School leads creative, hands-on classes to improve students’ nutrition, how they relate to their families and community, and how they participate in sustainable food systems. Cofounders, Alice and Erica, teach in local schools, community centers and after-school programs in the greater Seattle Area.

    Alice received her degree in Public Health from the University of Washington and is interested in the intersection of cooking, nutrition, and childhood development. She has been cooking avidly for the past 10 years for friends and family!

    Erica has worked as a professional cook for the past few years, most recently at the James Beard Award nominated restaurant, Canlis. She has managed a food cooperative and loves working alongside peers to bring the greater Seattle community delicious, wholesome food.
