Cooking Class: Pacific Northwest Italian – Della Terra, From the Earth

Italian food is all about “eating off the land,” using the finest local, in-season produce. The worldwide Slow Food movement, so called because it encourages taking time to prepare meals from scratch and share them with family and friends, started in Italy. It is an alternative to fast food and, as such, strives to preserve traditional and regional cuisine, advocating for the farming of plants, seeds, and livestock characteristic of local ecosystems.
Join Chef Cody Castiglia to create Italian classics embracing Slow Food concepts and using the Pacific Northwest’s seasonal bounty.
Our hands-on menu will include: a Spring Greens Salad with fresh fennel, local honey balsamic, toasted hazelnuts, and parmesan; and Roasted Mushroom Lasagna with Arugula Pesto for the main course. We’ll finish the meal by making Theo’s Chocolate Semifreddo! With meat, dairy, and gluten.

Cody Castiglia is the chef and owner of Della Terra Catering. He is educated in culinary arts and hotel and restaurant management. Cody, a third generation cook and entrepreneur, was practically born in the kitchen, learning Italian classics from his grandmother, Loretta. Originally from Western New York, his career has led him to some of the top hotels and restaurants in Dallas, Park City, New York, and now Seattle. Cody teaches farm-to-table cooking classes at four different venues in the Seattle area. His cooking philosophy is simply using the finest, local, in-season ingredients and treating them respectfully.
