To Your Health! Wild Sesame Fritters and Grapeseed Cookies

Happy Friday from the kitchen, Everyone!  It’s another beautiful Fall morning and the kitchen is abuzz with the sights, sounds and smells of today’s Market menu items being prepared.  Asako is busy as usual with making Apricot Sourdough, Orange Summer Squash Tarts (remember me talking about those bright, wonderful squashes a couple days ago?), and delightful cookies- a Farro Chocolate Chip and Einkorn and Grapeseed Flour Chocolate Chocolate Chip Cookie. The Grapeseed cookies are high in polyphenol which the doctors say you should drink a glass of red wine a day for.  If it’s too early for a glass of wine, grab a cookie to get your anti-oxidants!

We’ve created a dish- Wild Sesame Fritters- that uses another gem that is grown on the Farm.  Wild Sesame (also known as Perilla) is a part of the mint family.  In Asia, these herbs are known for their medicinal value since they are high in essential nutritional omega-3 fatty acid.  In fact, different varieties of Perilla are used as a daily staple in Japan and Korea.  The vegetable fritter has potatoes, peppers, onion, and garlic which is then folded into Wild Sesame leaf, egg washed, floured and then pan fried.  The meat version is filled with free-range ground pork, onions, garlic and carrots.  So far it has been a favorite among the kitchen staff.
